Gluten-Free Super Fudgy Walnut Brownies

These homemade gluten-free brownies are super chocolate-y, fudgy rich and pure delicious!

Ingredients

  • ½ cup (60g) Loanii-Living’s Protein All-ternative flour
  • ½ cup (40g) unsweetened cocoa powder
  • ½ tsp salt
  • ½ cup sugar
  • ½ cup brown sugar
  • ½ cup unsalted butter, softened
  • 2 eggs
  • 1 tsp vanilla extract
  • 200g dark or semi-sweet chocolate melted chocolate
  • ½ cup chopped walnuts

Directions

  1. Preheat the oven to 160°C / 320°F
  2. Grease and line an (8 inch) square tin with parchment paper
  3. Cream the butter and both sugars until well combined. Add the eggs one at a time, mixing well in between, until pale and creamy. Add vanilla and mix until combined.
  4. Add the melted chocolate and mix well. Stir through cocoa powder, flour, and salt until the batter is thick and combined.
  5. Add the walnuts and stir until combined.
  6. Scrape the batter into the prepared baking tin and spread it out evenly. Sprinkle extra walnuts or chopped-up chocolate on top!
  7. Bake for 30-35 minutes or until a toothpick inserted comes out with fudge crumbs clinging to it.
  8. Let cool completely in the pan, and then lift out using the parchment paper.
